UBC Totem Dining Room Head Chef

Fresh local ingredients & bold international flavours.

Chef Joseph’s passion for food fuels the creativity behind every dish he presents. He takes pride in using local, sustainable ingredients and taking full advantage of the bountiful seafood here in Vancouver.

Joseph has been at UBC since 2012. He started in residence dining, then expanded the UBC food trucks from one truck to five in two years. He is now back in residence dining as the head chef at Totem, taking the student dining experience to the next level.

Joseph has an Associate Degree in hotel and restaurant management, and Red Seal Certification as both a cook and baker. His experience ranges from fine dining Italian at Asti’s in Burlington, to film catering, to student dining at McMaster University and now UBC.

Fun fact: In 1994, his talents faced a royal test when he cooked for the royal family while they were visiting Yellowknife on their Commonwealth tour.
